Bijzondere wijn van de inheemse rode druif van Rías Baíxas, Caiño Tinto, die bijna nergens meer is aangeplant. De druiven zijn afkomstig van twee oude pre-phylloxera wijngaarden met graniet bodem. Deze wijngaarden geven lage opbrengsten en kleine trossen. De oogst geschiedt handmatig. Vergisting vindt plaats met schil gedurende drie weken. Hierna rijpt de helft van de wijn op roestvrije staal en de andere helft op frans eiken gedurende vijf maanden. Sulfiet wordt beperkt tot het minimum en de wijn is ongefilterd. Dit geeft een complexe en elegante wijn met de typische fijne kruidigheid van de Caiño Tinto en het kenmerkende zilt van deze Atlantische regio.
Very distinguished wine made of the native red grape variety of Rías Baíxas, Caiño Tinto, whose vines are hard to find nowadays. The grapes come from two old pre-phylloxera vineyards with granite soils. These are low-yield vines with small clusters. All grapes are hand-harvested. Maceration takes place with grape skins for three weeks. Afterwards, half of the wine ages on stainless steel, and the other half on french oak during five months. Use of sulfites is limited to the bare minimum and the wine is unfiltered. This results in a complex and elegant wine with the typical delicate spiciness of the Caiño Tinto and the characteristic salinity of this Atlantic region.
