Het ruige landschap van Ribeira Sacra, net boven Portugal is de thuishaven van de inheemse Mencía druif. Cristina en Maria bewerken hier kleine, 50 jaar oude percelen met graniet bodem. De druiven van deze Zuid-oost georiënteerde wijngaarden worden bewerkt op natuurlijke wijze en worden met de hand geoogst. De wijn fermenteert langzaam op roestvrij staal en de maceratie geschiedt met schilcontact gedurende drie weken. Hierna rijpt de wijn nog 8 maanden om de typische zuurgraad van de druif wat te temmen. Het resultaat is een verfijne, elegante rood met sappig rond rood fruit en de typische peperigheid van de Mencía in de afdronk.
The rugged landscape of Ribeira Sacra, just above Portugal is home of the native Mencía grape. Here Cristina and Maria cultivate serveral 50-year-old small plots on granite soils. The grapes of these South-east facing vineyards are farmed with natural practices and are all hand-picked. The wine ferments slowly in stainless steel vast and maceration takes place with the grape skins during three weeks. Then the wine ages another 8 months to soften the typical acidity of the grape. The result is a refined and elegant red, with round, juicy red fruit and a finale with the typical peppery hints of the variety present.
