Gelaagde en complexe Albariño die een aantal maanden wordt gerijpt in een amfoor gemaakt van ‘cocciopesto’, een mengsel dat reeds door de Romeinen werd gebruikt en bestaat uit gemalen tegels, specie en water. In tegenstelling tot klei wordt dit materiaal gedroogd in plaats van gebakken. Dit type amfoor is dikker en minder poreus dan klei. De wijn wordt hierna overgestoken op roestvrij staal. De druiven zijn afkomstig van de wijngaarden vlakbij de oceaan, waar ook de ‘Os Dunares’ Albariño van gemaakt wordt, dus de onmiskenbare ziltigheid speelt de hoofdrol in de afdronk van deze bijzondere wit. Er zijn slechts 1326 flessen geproduceerd.
Layered and complex Albariño, that ripens for a few months on amphora made of ‘cocciopesto’, a mixture that has been used already by the Romans and consists of grinded tiles, mortel and water. Unlike clay, this material is dried instead of cooked. This type of amphora is thicker and less porous than clay. Afterwards, the wine is put on stainless steel. The grapes are grown on the same vineyards of the ‘Os Dunares’ Albariño, which are located very close to the ocean, hence the undeniable salinity reigns in the aftertaste of this remarkable white. Only 1326 bottles have been produced.
