Deze blend van 85% Mencía, 10% Alicante Boushet en 5% andere druivenrassen is afkomstig van een 2 hectare groot perceel met kalkrijke bodem nabij het dorpje Toral de los Vados. Het is een op het zuid-west georiënteerde helling op een hoogte van 620 meter. Deze wijngaard bevindt zich vlakbij Pico Ferreira, maar aan de andere kant van de berg en met een hele andere bodemsamenstelling. Druiven worden voor 50% ontsteeld en zacht gekneusd met de voeten. Vergisting met druifeigen gisten vindt plaats in vier open 225 liter vaten. Maceratie is 24 dagen met zachte punch down. De wijn wordt dan overgestoken naar 500 liter oude vaten en rijpt nog 12 maanden verder. Door de hoge concentratie kalk in de bodem (ongewoon in Bierzo) is dit de elegantste single vineyard die César produceert.
This blend of 85% Mencía, 10% Alicante Boushet and 5% other varieties comes from a 2 hectare plot with calcerous soil near the village of Toral de los Vados. It’s a south-west oriented slope on an altitude of 620 metres. This vineyard is close to Pico Ferreira, but on the other side of the mountain and has completely different soils. Grapes are 50% whole cluster and are gently foot crushed. Fermentation with wild yeasts takes place in four open topped 225 litre barrels. The juice macerates for 24 days, the cap is gently submerged by hand twice daily. The wine is then transferred to 500 litre oak barrels and ripens for another 12 months. Thanks to the high concentration limestone in the soil (unusual for Bierzo), this is César’s most elegant single vineyard-expression.
